Ribs: Pork or Beef, St. Louis or Baby Back, Dry or Wet and Tomato Based or Vinegar Based???

A lot of these questions are answered by the region you live in. Texas is known for its big beef ribs you might see on the Flintstones, while in Kansas City you will usually have pork with a tomato-based BBQ sauce and The Carolina’s vinegar, or mustard based sauces are usually the norm. Regardless, you should try them all and discover your favorite.

I am passionate and a bit of a snob with two food items, ribs and wings. My mother knows this and yet she decided to do a rib recipe using the oven. I must admit they are delicious and very successful on the web. I don't want to work a smoker for hours on end. I like to get at least 2 hours smoking and finish in the oven and give them a kiss with BBQ sauce on a hot grill. Ribs will always be a great debate with so many styles available.
